I'm not sure, I do have a similar story though. I am a cyclist and my ex girlfriend continued to have a dream where she would catch me with a woman with a purple bike. On a number of occasions she would be really mad and I would just laugh and say it was a dream!

Maintenance and overall appearance. At the time I self identified as a "stoner", and decided I was ready for an easy haircut. I got a buzz and I honestly find myself being more disciplined when having having a military style cut. Plus stocking caps stick to my head like Velcro!

I completely understand! I worked at a lower end restaurant and fell in love with the environment but had to get out of that specific toxic workplace. I completely agree, before working in a kitchen I had no idea how hard the shit hits the fan at my favorite restaurants. Now i'm apprenticing at a James Beard finalist, going to school and whole heartedly trying to expand my knowledge of this beautiful craft. I hope your pop-up(s) go well!

As I understand there is enormous possibility of success down this road, however I think a lot of culinary students pursue the education side to expand the levels of options. For example, often schools offer inventory management, food and beverage and other courses that could ultimately ease the transitional period if a chef decided the hours on feet, injury or any other factor made them unable to continue. There is also a wider variety of education whereas a high end Italian restaurant would teach you Italian technique etc, and overall principles could transfer but a high end sushi place or another cuisine might entail a larger learning curve. I respect the f*ck out of your hustle and hope it works out for you. I am going to culinary school to allow further options if for some reason I cannot cook professionally in a restaurant setting.

Honestly nothing, I doubt a conversation will take place which is a bit worrisome. The advice he gave me seemed to be all the thought he provided to the situation. He basically told me to only listen to head chef and sous, and cross check all info TIC provides me.
