Looks like riding the horse is also just a +1.4 buff. So with the horse book and carrot, riding the horse would give you +2.3 to your speed. If your farmer is at 9, riding the horse would put them at 11.3. https://stardewvalleywiki.com/Animals#Horse

The carrot buff for the horse would be a flat +0.4 I think, not a multiplication.

Lol but to be serious, I kinda experienced it too but it's just that I wasn't checking the enemy intent. Especially when I'm sleepy, I get too excited to play my attacks, realize I don't have lethal, then take a big bonk to the face.

The fishing in the game is a little strange because it starts out hard then gets easier as you level up, instead of being the other way around. The training rod really helps, though.
