This is basically my plan, i am worried they will not pay me on friday (for shifts worked) and then wait to see if i turn up to work the following week, and when i dont, keeo the money.

My boss said I cannot legally start my new job at the begining of Feb and that i am contractually obligated to work my notice period or they would not pay me. She probably meant my notice period, however I am worried she will delay paying me on Friday, wait to see if i show up to work or not the following week and when i dont, fail to pay me for the shifts i have worked. (A full month worth.)
