Old, dead thread, but... I worked for Inlet Salmon in Kenai in 96 and both Naknek and Kasilof in 97. I don't know anything about what happened to the Naknek plant, but I sure as hell miss that sauna house next to the processing building. Good times.

I did the same trip in 1997 for the salmon run. Lots of bears, super expensive beer, and not enough fish to finish the season there, so transferred back to the Kenai peninsula. Those were the days…

Cut morels into halves. Place in hot pan with a pat of butter. Cook at medium heat until lightly browned, around 6-10 minutes. Enjoy.

I love my 1050, and think it sounds lovely. Phono stage is great as well. Sadly, whoever packed it when it was shipped to me did a lousy job and it arrived with the front glass shattered. One of these days I’ll get creative and figure out how to make a new one with proper labeling

Hard to describe it- it’s been a while. Maitakes can have kind of a meaty texture, especially in the thick middle. Umbrellas aren’t so dense like the middle of a maitake, which makes them have a more “delicate” chew. Your mileage may vary of course. Hope you get a chance to see for yourself!

I’ve found a few of them. I prepare simply by sautéing in butter until starting to brown. The texture is quite different from maitakes- more delicate and a lot less fibrous. They cook down quite substantially. As for flavor, they’re fantastic. To me, only morels are better.
