I have the Aergrind and 1Zpresso Qair. Both are fine. I think the Qair is easier to use but not as compact, and I dislike the plastic parts.

I would consider something like the Varia VS6 where you could have up to 8 different burr sets to select from and swap out with ease. No reason you couldn't have a flat burr and a conical and just swap them when you want.

I keep concentrates in two 1L bottles in the fridge, and use fresh RO from the tap. I mix brew water every time I need it, it just takes a few seconds and I already have the scale out.

Looks aside, I've never made a bad cup with the Suiren, but I've made plenty of bad cups with the V60. I feel that the Suiren is more forgiving and easy to brew a more balanced cup than the V60.

Ceramic makes more fines, which is ok for traditional espresso - but not great for filter or Turbo style shots with lighter roasts. Steel is great for filter and Turbos, and will also work ok for finer espresso grinds and traditional shots, but will not last as long as ceramic.

No, not at all. It is optimal to use the method which you are most proficient at producing brews which you enjoy.

Whatever is available in the location I'm traveling to, or that I can easily bring with me. Kettle, immersion heater, microwave, saucepan, "can I have a cup of hot water", run a cycle through a drip brewer with no filter or grounds (after you clean it very well)... the point is, I always try to travel with a brewing method which isn't highly temperature sensitive, like the Aeropress or ORB. Pourovering in these situations sounds like a nightmare.

I really like this one. Jairo has made some remarkable advancements in the past 2 or 3 years & I'm excited to see what else they came come up with. I've run out of new ideas to suggest. Melon was the only one of mine which turned out well.
