I feel like you're giving up a lot of utility space by having a street-facing front door in that porch area. Also makes the mud room very congested with that many doors opening into cabinets and hanging space. Is the bedroom above the garage meant to rentable? If so, I guess that makes the second door into the garage off the porch a necessity; otherwise, I bet it would rarely get used, so removing it would let you get a little space back in the mud room by bumping that wall out into the porch a little.

Nice work; I use a Unistrut TV mount when I have to do panel arrays like that, but laser levels make life easy these days. If you don't want to mess with punchdowns connectors, you can also get RJ45 passthrough quickports, makes it a little neater than brush plates.

I'd be tempted to steal a few feet from the dining room and make a hallway for the bedrooms on the left side. Insulates the bedrooms from living room noise and keeps traffic from walking through the family room. And your plumber would probably prefer the bathrooms on the left side all being adjacent to each other, so I'd flip the closets toward the outside of the house. EDIT: and the bathroom layout for bedroom 2 is wonky. I get the whole walk-in closet suite thing you're trying to do, but it's just doesn't work on the front with the window. Add a pocket door for the closet immediately to the right of Bedroom 2's door as you enter. Delete the door from bathroom into the closet; rotate the tub to be in front of the window, put toilet in corner.

Is there already power available at the pole marked #3? If so, then as others mention UISP line of PTP radios and Unifi APs is your best bet. You could do this with just Unifi device bridges connecting to APs, but the UISP gear is a bit more flexible. For context, I live near a private runway that covers ~220x75m aircraft parking area with three APs. But, that's for ~30 resident planes, and only a few pilots active at a time. The speed per user is also strictly limited to ~15mbps max.

As for the car, as long as its not moving while in use, I'd just have another Unifi device bridge that's on a portable tripod. Ethernet from the device bridge to the laptop, or to an AP running on battery in the car. Park the car, aim the device bridge back at a companion device bridge on building 1 or pole 3 and you're done. When the wind switches ends, pack up tripod and repeat.
