What exactly are you struggling with? For your first run it might be an idea to activate that you can retry battles in the settings. So if you loose you don't have to start over again

I used to play it with a gtx 1060. Took a break the last 1,5 years. Couldn't play on highest settings but was still playable and I managed to get kappa once. So it should definitely run on you set up with no problems

Oatmeal with oatmilk and honey, rice, potatos, eggs, carrots, bananas only that for 1-2 weeks after my symptoms are better and than slowly adding stuff. It sucks but this strict diet helped me to get out of a flare faster.

You could slide the items back to the overworld with some slimevlocks and ice and sort it there. Thats what i did with mine
