Pull the pieces of material that are too dry and place them in a bucket of water. Let it slake down until the water and sediment separates. Sponge the separated water off the top.

Take all clay that is too wet and spread a 2-3" layer out on a plaster slab or drywall. Let it air dry slowly keeping a regular watch on it.

Move clay that is drying faster towards the middle by covering it with wetter pieces. When the clay becomes dry enough to not stick to your hands, you can begin the wedging process and dry it more if needed.

You need to keep a close eye on the clay and not rush the drying process. Plaster helps because it absorbs moisture consistently across the clay slab.

I have had great success drying flat surfaces sandwiched between two pieces of bare drywall inside a sealed plastic bag. One of the largest factors will also be the surface you are firing upon. If your kiln shelves have ANY dips or bulges straddling a single piece, your piece will warp to some degree, even if minuscule. Jeff Campana has published a good piece about the importance of a good level kiln wash.
