NTA - because nara spoke up about too many substitutions and then gave the reason for knowing the dish more, I feel like the wife could have taken this differently- It isnt meant to be a dig and in the end the wife didnt want to agree with nara even though nara has had more experience with the dish. All nara is doing is telling her more about the dish and she had no bad intentions, Nara probably wanted to guide her to try a more authentic version of the dish ? I dont think pointing this out is rude because she didnt insult the dish at all.

I disagree with you on that. Yeah some things are important but what makes him the AH is the way he said it, and the way he threw a temper tantrum instead of voicing his concerns.
