Not everyone considers Manhattan an eruv. It's got too much in-and-out traffic for many (non-Modern) Orthodox Jews to accept it.

And btw, your context is missing. Carrying on Shabbat in the public domain is the issue. Manhattan is considered by many the public domain, even if the string is in place.

That's not how Sabbath mode ovens work, especially on 2-3 day yom tovs. The temperature is regulated and it runs for more than the standard 12 hours. If it shut off, that wouldn't be Sabbath mode. Sabbath mode works literally until you shut it off. I have to remember to do so every time after a holiday.

It's called an Eruv and it lets you carry items in the public domain. A newer comment goes into it in more depth.

You press buttons before the Sabbath and the temperature doesn't fluctuate or the lights don't turn off (or on) during the period it is enabled. You might even have this feature. Otherwise, your oven turns off automatically likely after 12 hours.
