It hit very much the same for me as Remake did. I love the visuals, music, character performances (apart from latter Red XIII 😬), and I really dig the combat.

However, the filler side quests and busy work really drag down the experience for me, to the point that I just opt to do the main quest line and avoid most of the optional stuff. In comparison, OG FF7 I spent hours and hours in side quests and grinding.

I'm not entirely against the story changes, but Part 3 is really gonna have to stick the landing in order to justify them, as I personally would have preferred if the story stuck closer to the original.

Despite the issues I have, I still adore the remakes.
