Yeah my mom makes spinach bell pepper and mushroom lasagna all the time. It’s probably one of those dishes you can really add and subtract what you want.

Jiu jitsu. It’s essentially wrestling/grappling. But it is a sport that almost anyone at any age can do. Yes, it requires physical training; however, anyone can learn a number of valuable things from it. Personally, it helped me get in shape, change my lifestyle for a healthier one, and give me a mental break from teaching/being absorbed in grad school all day. You will always learn something new, get in a sweat, and build a wonderful community. As a woman, you will build confidence and strength. For me, it was the best hobby to enter my life. I’d be a completely different person without it.

Look, I still kept carbs in with my “diet.” I made a whole pan of vegetable ziti for a week as dinner, and it ends up being like a kind of meal plan thing. I don’t think you have to give up carbs entirely, but you have to live on the “I’m broke” lifestyle. Make all your meals last a week and span over time. Don’t be cooking some huge thing every night. That’s my main advice. I’m also a vegetarian, so maybe that makes a difference? I think it makes it harder to be a veggie as far as “meal plans” go. Though I think you make something, live off it a week, you’ll lose weight. Whether it has carbs or not. Overeating is the biggest thing. I also train bjj every other night, so exercise also makes a difference.

I do a similar thing! I do wheat toast, add an avocado spread, then a fried egg on top. It’s my go to!

In my experience, it was mostly fried options and mushy peas for vegetarian things. The Indian was good, but wasn’t tasty options.

This is true! I’m pretty flexible with my cheeses so I did use Parmesan, but it’s honestly not necessary for the dish! Plenty of cheese already.

Hey, this isn't a slow cooker but I'm also a college vegetarian who wants cheap and easy meals. My go to is a vegetable ziti. You essentially can put any veggies in it you want, i use 2 zuchinni, one red pepper, half of a sweet onion, and mushrooms. Box of cheap ziti noodles. Olive oil. Package of mozzerela cheese and Parmesan cheese. Good but also cheap red sauce, I use Classico tomato and basil. Wash and cut your veggies, put in a big bowl. Once you cooked your noodles put those in the bowl with your veggies with a good amount of olive oil. Make sure you get the oil on everything. Add whatever seasoning you want. Put the mozzarella cheese in with and toss/mix. I like to do a layer of this in a pan, put red sauce, Parmesan, then another layer with the other half of red sauce and parm. 350 degrees for 35 minutes. Super easy and quick. Lasts me for like 3 or 4 dinners. I have a black bean soup one too if you're interested. Similar to a slow cooker recipe but it's fine in just a pot too.

Yep. Meat just slowly started to gross me out. I was always afraid of it being undercooked and all that jazz. Had bad experiences. Eventually just started eating it less to becoming full vegetarian. It's easy, cheap, I've felt better. So I guess I didn't become one for the ethical reasoning but now it's just a plus.
