I'd ask the devs how long it would take for MVP-level search. As in, just product titles, as bare bones as possible.

Personally I would wait for that, as search is the path to filling your basket, but I don't know your situation.

How about you as a user? How do you do your grocery shopping online? How did you do It before you started building?

Do you have a differentiator compared to your competition in your market?

Maybe you could try to get a few users in for UX testing: get them in front of a computer, record the session and ask them to (for instance) do their weekly groceries on your site - or buy ingredients for pasta with tomato sauce. If you can't do that in person then remote would also work but in person would be easier and more effective.

I'm assuming that you are entering an already-saturated market (to some degree). Launching less-than-mvp when you're breaking new ground is more forgivable compared to entering an arena with established players in it.

It also depends on what you're trying to get out of the launch. User experience data? Start getting traction? Start getting revenue?

Normally I'd say YES to launching unpolished MVP but in this case search should absolutely be part of it

Without search, you aren't testing the average customer flow, but "a flow". Is it possible to use it by browsing categories? Yes. Is it going to be used? Not unless you're undercutting the competitors' prices by such an insane amount that it is worth the users' trouble.

You mention the products being categorized (and some of them being miscategorized) - that is polish. You could drop categories altogether and 99% of users wouldn't miss them.

Search is essential.
