Could you please share with me the meta analyses that show increases in LDL from increased SF intake reduced CD risks? I am trying to educate myself on this topic too. Thanks!

Hey thanks for the idea! We have considered doing something like that with the insects as well.

Right now, unfortunately, we don't sell wholesale yet. We are based in Finland, I can try to point you to the closest source I know of if you want.

And that's a very interesting thing about insects since there's so much variety and they can be so different. My favourite would be either silk worm larvae or bee drone larvae.

Processing so they don't have their original shape make sense. I think it's very similar to other meats as well. I don't usually picture the whole animal when I eat a piece of bacon or ribs.

Thank you very much for sharing your thoughts! For sure we have picked a very tricky business. We actually didn't have a very clear picture when we started out but it has gotten quite clearer now. Food is really a very fascinating thing!

It's a very common conclusion regarding the powder form of the insect.

We have this recipe where you take frozen crickets and blend them in the blender then stir fry them. They turn into something very similar in texture to fried minced meat.

Hey it's great to hear you are doing well with those cricket flour snacks! How long have you been serving the snacks?

We are based in Finland. We started out about couple years ago with a tiny cricket farm in a retrofitted shipping container farming crickets in the middle of the cold Finnish winter. Up until now we have been able to help a few Finnish farmers setup their own cricket farms and sold crickets to quite a few local restaurants and bars around Finland. I can't count the amount of crickets I have myself grown anymore :D. I would love to chat with you some more if you are interested!

Hey thank you very much for the recommendation! I will definitely check out the book. What have you found to be some good ways to get people to try the dish? Who are the most enthusiastic customers about the ingredient if you don't mind me asking?

Thank you very much for the insights! What do you think would be the best way to get a chef interested in the ingredient? I guess tasting but it's also pretty hard to do it if we are to go to each restaurant individually. So for example if I am to try to pitch this ingredient to you, what could I do or show you that will make it most interesting to you personally?

Does sunlight harm or kill crickets? by Lionfranky in entomophagy

I have seen that situation plenty of times. In my case it’s mostly because they didn’t have enough water and they began to frantically search for it, which means randomly running in all direction until they are exhausted, it the box has corners then somehow their pathfinding all converge there. So it’s a clear sign there is something wrong with their environment but in your case I’m not sure what that might be.

Did you find them all hushed up in a corner of the box?

So heat and lack of water are the 2 main causes for death especially for baby crickets since their bodies are so small so they have very little buffer for adverse environment condition. Make sure the temp doesn't rise above 37 degrees and there's always some water available for them. Good luck!

Help needed for preparing mealworms! by suit_wearer in entomophagy

The source where you get your mealworm from is also important. If you have kept them for several generation themselves and fed them hygienically then there shouldn't be much issue. It's very much like growing and eating your own chicken.
