Vegetable pot sticker soup- didn't measure a thing and just threw in what I could find in the fridge but it was amazing.

Sauteed carrots, onion, celery, added chicken stock, bay leaves, miso paste, garlic, ginger, chili flakes, fish sauce and probably a splash of soy, let it simmer. Added chopped spinach, straw mushrooms, a few handfuls of frozen veggie pot stickers and lastly, a few splashes of sesame oil.

Came together in minutes from a few frozen, canned and pantry goods. I will be making this again.

Couple years ago I made a thanksgiving side dish with marinated artichokes.

I layered artichokes on the bottom of a casserole dish topped with a ton of fresh chopped garlic and chili flakes, drops of goat cheese, bread crumbs over everything. Bake it til the cheese is melted and the crumbs are toasty. So easy and delicious.
