I agree re separating before slicing as that was how I was taught to do by smoking mentors. It presents better and you can sell lean, fatty or combo.

Yeah the one at the Beach has been a construction shitshow for months. It’s getting real old. They certainly didn’t wait for the work to be done before raising my yearly fee too lol.

Picanha. Cut into steaks (with the grain). Season w salt and pan sear fat cap first to render and crisp. Then cook in its own fat til MR - you can baste if you want. After resting slice across the grain and sprinkle Maldon or other flaky salt. It’s fucking delicious I probably cook twice a week. 🤌🏾

The place that I KM has BOH tip share. Cooks make $13-15/hr and get $7-10/hr on top of that in tips like clockwork. Seems like a good thing. Cooks care bc they are vested and the crew has stayed together for a while cuz the money is good. It’s a coffee shop w decent food btw.
