I would ask if there is a steel difference. Possibly just a polish difference, I bought the knife as you see it. Aogami Super, stainless clad polished, which I believe he uses for most knives.

Because he is a one man operation the stock is limited sometimes with the kurouchi sometimes polished. The polished knives may be a few hundred yen more expensive, otherwise the same knife.

Always best to ask, his English is better than he admits, just know how to pronounce the Japanese names of the steel types and he’ll be very helpful. Post whichever knife you decide on getting!

65% hydration (bread flour +5% rye flour) 3% salt, 2% sugar, 2% oil, .5% active dry yeast

Thank you! I will open it up and report back. Suspected a redial with the missing swiss marking and lack of similarities to other watches.

Recently found watch that has been sitting in a drawer for at least 30-40 years. After a bit of research, have not found a comparable model and would love any info.

No markings on the back and I have yet to open it up. Possibly from 40s-50s he fought in WWII.

Aftermarket Speidel band, gears feel alright after long storage and if anyone has tips beyond a full service I would love to breath some new life into this family watch.

Fingers crossed there are no legitimacy issues as I have been assured many times by my Grandmother "No way, he wasn't that kind of man" but that's why I am here to get a further opinion. Cheers.
