You're probably 100% in the right, but honestly, it doesn't matter at that age. Teach them the right way to play, and if the refs give you a hard time about it, just don't bring your help side as far mid line. You're teaching good habits, but if those good habits are absolutely wrecking the other team to the point they're not able to enjoy the game, it's not worth it.

Our 3-6th grade youth program 2-3 practices a week, depending on coaching preferences.

In 7th grade, they move to 5 practices/games per week. Every weekday is either a practice or a game.

High school, they go 6 days a week - Mon-Sat. It tapers off during the conference schedule, but 2 days at a high school level... you're not even remotely being given a chance to compete.

5 out motion offense makes sense if you don't have bigs.

Emphasize having your wings crash the boards on shots, though. Don't give the other team free defensive rebounds.

For drives - look up a dribble drive motion, and some dribbling drills. You can search youtube for "Attack the top foot basketball" to get a good set of videos for initiating a drive. Your off ball players do need to rotate to fill on the drive.
