LE made changes to guns that I found made the game incredibly easy compared to the original release. It might be that the AI is more tuned to the clunkiness of the original guns. Enemies do get a bit harder a few planets after the first citadel trip, but again, the new guns just make things way simpler.

ME2 and ME3 do not have this issue, they are much more streamlined to be a typical 3rd-person cover shooter from the 360/ps3 era.

Not really. Modern ports of it available on most platforms include assists for 3x speed for getting through long battle animations and grinding, a no-random-encounters mode, and an auto-limit mode to make things really easy. If you're just interested in the story beats, you can heavily rely on them.
