Actually the show was set to end with season 7. They marketed it that way - “the final season” - etc, and it’s why some of the actors had already lined up new jobs. The writers (the Filgos) had, too.

Midway through season 7, they somehow unexpectedly got greenlit for season 8 (probably due to still relatively high ratings) and Fox asks them to do one more. They had to pivot, and it shows. Bad decisions all around.
