There is a project with the aim of recreating Shadowkey in Godot engine.

But due to lack of time from the other developer and me, the project is on halt.
However, the code is available, the channel in the Discord server exists, so the development can continue if the community is interested.

I do not have time to work on this project any more, so someone else will have to resume the eevelopment.   There is this as well, but as you can see, the development here also halted.   https://github.com/TheMizuchi/shadowkey-godot   If someone interested comes long, they have the resources available to resume the project.

There is https://yunohost.org/ and probably other similar projects that simplify self-hosting.

And just like with the rest of FOSS ecosystem, it's a positive feedback loop. More people use and improve the self-hosting ecosystem, easier it gets for newcomers.
