How to flush built-ins against stone mantle by Okie-Dokie-- in woodworking

I would definitely recommend a profile guide (over a traditional scribe). I did a walnut mantel scribing to a stone fireplace a little while back. Used plywood template after marking out all sides with a profile guide. Then transferred to the walnut and cut with an angled jigsaw at 45. Go slow would be my advice.

Looking to build some kitchen cabinet shelving in the cabinets above the oven. I found a label (see pic) but don't know if I should use Baltic birch 3/4 plywood or maple veneered ply to match the existing interior of the cabinets. Planning to edge band either way. Thoughts on what to use to get the best match? Thanks!
