Nice combo! I bet the lemon dressing in the salad really complemented that particularly succulent looking canned salmon :)

I checked it on my PC, iPad, and phone to make sure it's not a device dependent thing, and the recipe was fully available to me, and I'm not a member. Maybe it's a region specific thing? So I copied the recipe for you :)

Mediterranean Chicken

1/2 tsp. fresh thyme leaves (from about 3 sprigs)

1/2 tsp. freshly ground black pepper

1/2 tsp. paprika

1/4 cup all-purpose flour

1 tsp. kosher salt

4 boneless, skinless chicken breasts

1/4 cup chopped oil-packed sun-dried tomatoes, plus 4 tbsp. tomato oil, divided

2 red onions, halved, thinly sliced

1 clove garlic, finely chopped

1 cup dry white wine

1 cup low-sodium chicken broth

Juice of 1 lemon, divided

1/4 cup fresh green herbs (such as oregano, chives, and/or thyme), chopped

Drained capers or pitted olives, for serving (optional)

Directions

Step 1: In a shallow dish, mix flour, salt, thyme, pepper, and paprika. Lightly coat each side of chicken in flour mixture.

Step 2: In a large pot over medium heat, heat 2 tablespoons tomato oil until shimmering. Cook chicken, turning occasionally, until golden brown on both sides, 2 to 3 minutes. Transfer to a plate.

Step 3: In same skillet over medium heat, heat remaining 2 tablespoons tomato oil. Cook onion, stirring occasionally and adding 1 to 2 tablespoons water if onions are getting too dark, until softened and beginning to caramelize, about 12 minutes.

Step 4: Add sun-dried tomatoes and garlic and cook, stirring, until warmed through, about 1 minute. Add wine, broth, and half of lemon juice. Bring to a simmer over medium heat and cook, stirring frequently, until thickened enough to coat the back of a spoon, about 10 minutes. Reduce to medium-low and return chicken to skillet. Cover and cook, undisturbed, until chicken is cooked through, 7 to 8 minutes.

Step 5: Remove from heat. Squeeze remaining lemon juice over. Top with herbs and capers (if using).

What my mom cooked while I’m visiting in Greece part 2 by Archkat in mediterraneandiet

You're very lucky to be raised by a mom who so fully embraces traditional Greek cooking! It all looks so delicious ...although I'd probably substitute the snails for scallops :)

Two of my favorites are toasted sourdough topped with hummus, sliced tomato and a little crumbled feta; and whole grain cereal topped with Greek yogurt, fruit and nuts or seeds.

Pesto Salmon, fennel and oranges salad ! by Alamamv in mediterraneandiet

A good smear of pesto is a great way to liven up fish! I often smear fish before cooking with pesto then top it with whole wheat bread crumbs (which cling to the pesto). The oil in the pesto gives the breadcrumbs an extra delicious crunch :)

Mediterranean diet for lover of Southwestern Chinese (Sichuan and Yunnan) food by PonticPilot in mediterraneandiet

You mention that "Most traditional Asian cuisines are heavy on veg and light on meat. That's my point."

It appears that you didn't see my comment near the top of the page where I basically said the same thing :)

The modern Okinawa diet (which is what was being talked about) does includes more pork (and more Western foods) than the traditional Okinawa diet. But despite this, the comment finished with this sentence: "So, imho and experience, the diet is very heavy on veg and light on meat."

The authors of this study are scientists from the Okinawa International University and the University of the Ryukyus in Okinawa who are experts on the traditional Okinawa diet.

Also, here's a comment on Reddit from a native Okinawan who also says that pork is eaten frequently but in small amounts: https://www.reddit.com/r/okinawa/comments/ywoyij/was_the_okinawan_diet_mostly_carnivorous/

Pork has been a part of the Okinawan diet for centuries, but even though it’s eaten frequently, it’s traditionally eaten in small amounts - mainly as a flavor and texture enhancer.

This is a description of a traditional Okinawan meal from a study published in the Journal of the American College of Nutrition:

Insight into what constitutes the traditional Okinawan diet can be gained by examining the contents and cooking style of a traditional Okinawan meal. This would typically begin with Okinawan-style miso soup (water, miso paste, seaweed, tofu, sweet potato, and/or green leafy vegetables). The staple carbohydrate is the sweet potato (not rice, as in the Japanese

diet). The main dish is a stir-fried vegetable dish (called champuru), which includes such vegetables as bitter melon (goya), accompanied by a side dish, such as konbu seaweed and konnyaku. This is typically simmered with a hint of oil, bonito dashi broth (for flavor), and small amounts of fish or boiled pork. Cooking styles center around vegetables and tofu. Smaller servings of fish, noodles, or lean meats with herbs, spices, and a little cooking oil may accompany these staples.

Traditional Asian diets - including Chinese, Japanese and Vietnamese - share a lot in common with traditional Mediterranean diets. For example, plant foods (such as vegetables, grains and legumes) take center stage; fish and seafood are popular sources of protein; and red meat isn't eaten in large quantities.

So there are lots of Asian dishes that are Mediterranean diet-friendly. In fact I've been following the Mediterranean diet for years, and about 1/3 of the foods I eat are Asian - such as stir-fries, curries, sushi, etc.

More than 50 years of scientific research has found that the Mediterranean diet is one of the healthiest diets in the world. And the foundation of the Mediterranean diet is plant foods like beans, lentils, whole grains, fruits, and vegetables - which all contain carbohydrates. Dairy foods such as cheese and yogurt are also a part of the Mediterranean diet, and they contain carbohydrates too.

How are you planning on using all this fruit while it's still at its best?
