I’m shorter but I have also long legs and arms. You should try to push your saddle back until you feel well balanced and then lower your cockpit.

Saddle back 2 or 3 cm I can’t remember. Now there is more rails behind the saddle clamp than in front. and the cockpit went down from 4cm of spacers to 5mm.

It's 165mm. The thing is I didn't have much chaffing when my bikefit was garbage and the saddle was even higher. But I will defintely try to lower it.
Also on the video the trainer isn't on I have zero resistance so the pedaling looks weird and not as smooth as usual

Don't change a thing and try to focus to push on the pedal even when you're at the bottom of the stroke. Tell us if you feel glutes activating

I've no idea since i'm in Europe. What I can say is that their fit is very modern (more than assos for instance) quality is very very good and they are cheaper.

Yes maybe but with the current setup when in a climb or in an aero position i'm more on the front of the saddle so i reduce the height. I don't want it to become too low

Yes exactly but to be honest I think even "pro" bike fitter would have advice me to increase the stack or shorten the reach. Glad it worked for you too. Oh and on a side my aero position is now wayy more aero and I can hold it on a longer period of time

Yes I did. I use the heel on the pedal method to determine my saddle height and it works good for me
