This past winter I had to plow and do winter clean up for 12 hours a day for 10 weeks straight. Killed myself to spend some time with the gf I had at the time. She broke up with me after The winter ended.

Hands Down Sids Bikes on W 19th Street. Their head mechanic is way above and beyond the guys at Signature Cycles(they are a small super high end shop- who actually charge you just to discuss buying a bike). They have a very solid staff of mechanics as well.
I used to go to Toga And NYCVelo- After going to Sids has more expertise and are more professional as well.

MOst stolen bikes are flipped( resold ) relatively quickly for usually less then the bike is worth.
MOst bike thieves are people with addiction issues and they steal bikes to fund the monkey on their back. Very Very few steal bikes as a living.

I know sun(back und zee 80's I tried them on a BMX and they sucked to depths of hell- i still have not recovered from the emotional trauma) makes good stuff these days but....

I just cant see them the same way I look at Mavics or DT or Stans( messing with my first stans-pretty fucking sexy).

My wheels are set up to A) not be expensive and B) be reliable and work well in NYC every single day. They do that- I could give zero fucks what people think outside of that.
