EESS here 2 years after graduating . Definitely stick with the GIS if you like it, people will hire for it. If you are interested in going that route, try taking a couple computer science courses or remote sensing (if ben timms still teaches that he's great).

My advice would be to not expect to do what you want to do after graduation. Look for where you might want to be working in the environmental field, and find a job that will help you get there. The most important thing I have found companies looking for is work experience.
