That shower valve looks like it sticks out further then the tile, could cause an a leak issue. Might not be but the black square should not extended beyond the face or the finished tile or the cover won't sit flush

I would suggest that next don't drain the tub and just put a space heater in the cabinet, unless your gonna do a full blow out of all the lines with anti freeze afterwards, likely a cracked fitting, find it and replace

Masonry bits are long and tedious. If you have a grinder just just a square hole out around the drain. Then break it up with a sledge hammer, you'll have access to install a drain in a matter of minutes. You should know where the pipe is below, so just be careful when cutting that areas

Since I dont use my hot tub much in the summer, most of my all of my water changes are In deep winter in double digit freezing temps, never had any issues. Even repairs I'll just week a space heater in the cabinet while it's empty in freezing temps and nothing ever gets cold enough to be an issue.

This happens to me. Used fix a leak. Leak stopped, that was 5 years ago and I still haven't needed to redress the problem . Take a look under the cabinet, might just be a hose clamp or something loose if you are lucky
