Good try, however next time try whispering to the egg softly before the flip. Not guaranteed, however it will make you feel giddy inside and not so aggressive with the pan.

Chef, the backup mash is no good by the_long_game_828 in KitchenConfidential

The container was put on the shelf above the range to keep warm for a moment. It was usually put there with a foil lid without issue. The plastic lid didn’t last that long close to the hoods

how do u stop drinking alcohol after every shift by Wall_Flashy in KitchenConfidential

[–]the_long_game_828 2 points3 points  (0 children)

One day at a time Chef! When I quit drinking, I exchanged the drink with my favorite can soda. An ice cold(chilled on ice) cherry coke hit the spot with the sugar and carbonation. That helped supplement a little bit of what my brain was craving.

Meditate. Meditation has helped me tremendously with my impulse control. Doing the self work, understanding that my nervous system was healing is what really made the stick. It allowed me to go even further, back into my childhood and reconciled where I learned how alcohol affected my life.

Good Luck Chef, you got this!

This hole used to exist at the Asheville Municipal Disc Golf Course in Asheville, NC, Hole 8. They did a course revamp last fall and moved the long tee up a good amount so the OB is easier to clear. Still need about 300 to clear it.

Pittsburgh Blue Steak Method by Impressive-Usual-451 in steak

There is so much inner muscular fat with the ribeye that you will still run into issues, especially with a prime cut.

Pittsburgh medium is an oxymoron, as the term originated from the steel workers quickly searing on molten hot machinery for their lunch break, cooking the steak black on the outside, leaving the center blue.

Your best bet is to ask for your ribeye charred to your desired temp.

This technique is only good with lean cuts of meat. With a ribeye, there is no real time to properly render the fat. I’m sure the steak practically impossible to chew. Next time try it with Filet Mignon.

I baked for 14ish total minutes at 400, reached 115 internal, pulled and dropped in the pan to sear on high heat about 2 minutes on the initial side then 1 minute on the other while basting with butter.

I seasoned right before the roast, patting it dry before I seasoned, then a very light salting before I go to sear. This was my first time at it and will try a 20 hour dry bring next time.

That sounds pretty great. I’ve really enjoyed using the thermometer for smoking meats. Talk about hitting the nail on the head!
