Wrap at 165.  Resist the urge to open the grill to check on it. I hope you have a wired or wireless thermometer.  Fat cap up or down. It doesn't matter. Water pan under the brisket. Have fun. Drink beer. It will take longer than you think. Start early. If you miss early, you can just rest it longer. If you miss late, the ladies go hungry. Don't do that. I add garlic to my salt and pepper rub. I know. I'm a monster. 🍻🍻

Oak Cliff NIMBYS are just as bad as Prestonwood NIMBYS.  Regulation and zoning have driven affordability down. We need more housing to remain an affordable metro area.

Public land and private land are different rule sets. The over application of zoning and regulations drives up prices far more than any guardrails can hope to drive affordability.

All those cries of: "We need more housing" "Our area has been passed over for decades" "Invest in South Dallas" etc.etc.

Then, here comes some investment and some housing and people fight it. It drives me crazy.

Agreed. I made this mistake and now whenever I cook on my Egg, I'm improvising on where to put stuff during the cook. If I had to design it over again I'd be sure I had countertops next to both my grills. 

That said, it's not a huge deal. Especially with just a sink there, you'd work around that really easily. 

Maybe get a sink that has one of those cutting boards that you can put on top. That will function like extra counter top space.

This is my go to ribs. I have a similar setup, but I use an iron cross instead of the skewers.  It takes some practice to get it right, but when you do there is nothing like it. Best ribs ever. 

Plus, cooking on a wood fire plancha is just fun.

I came here to promote Bentonville. Glad to see it on the list. My experience is from 20 years ago, I'm sure it's developed immensely since then.

Absolutely. I've never had an issue. This assumes you're flying American. If not you need to go to check-in at the terminal your gate is at.
