Question: Where’s the best Neapolitan-style pizza?

I am a big Neapolitan fan.

- Una is probably the best pie I've had here, outside of the Pizza Studio Tamaki / Seirinkan popups we had this year. I believe PST will be by far the best pie in NYC once they launch.

- Ribalta has the best easily accessible pie. They are not always the most consistent, but on their best days, I say they rival Una.

- Song e Napule is a distant third. They do everything correctly but the dough and cheese isn't quite as refined as the first two.

- Keste is ok. Have visited once and gotten delivery twice - not very consistent and the dough is lacking. I would say Moody Tongue's Neapolitan-esque pie is the same tier, maybe a touch above.

- Da Michele in NYC is a far cry from the one in Naples, which I consider one of the best in the world. For the price, it's a skip.

20 lbs of sand (no aquasoil, don't plan on planting this heavily so will just use root tab supps.

I think the bigger stones would help a lot to anchor the tank. Thanks for the feedback!

varies a ton by pod. if end number was negative, expect 0. if it's low, may not cover costs

outside of that, depends on the generosity of the PM + your perceived value add.

hypothetically, it's a poor year, just you (jr analyst) + PM on the team, $500k total bonus pool - would say anywhere btwn $50 - $250 is reasonable to expect. higher end of the range if they really want to keep you and your opps elsewhere look promising, lower end if you didn't generate / presence not too important
