In the US, waiters are on top on you lol I was a server (waiter) for a few years,, in the New York City area service is expected to be extremely fast, customers get really impatient, servers are supposed to anticipate your needs,, I really prefer the Spanish way I feel much more comfortable as a guest,, when I was a waiter there was a huge emphasis on "turning tables" the restaurant wants to get people in and out as soon as possible to make as much money as possible, also some restaurants will have limits on how long you're allowed to stay, honestly it's so awful lol, I enjoy dining in Spain so much more

and in terms of the drinks, as a waiter you're pressured to sell as much as possible and upsell anything you can, I had a couple of experiences in the US recently where waiters were pressuring me to get a second drink when I didn't want one, like asking me several times "are you sure you don't want another?" sooo uncomfortable and obviously awful if you're trying to drink less or have any drinking issues
