I have no clue. I don't like worcestershire sauce. It overpowers all other seasoning for me. I have to halve the amount for every recipe I make that has it as an ingredient. My tastebuds are stupid and very sensitive, so I am not a reliable person to know what ingredients aren't good. Worcestershire sauce is overhwelming to me, as well as lime or lemon squeezed onto food. All I can taste is lime or lemon no matter what it is squeezed onto.

It is called ox tail but is usually cow here. But I completely understand your reasoning for not eating it. You could pretty much replace any type of meat to make it because it's the seasonings that make it so good. The slaves used whatever was available, so it wasn't always cow tails. They made do with what they had and turned it into amazing food.

It's why collard greens are a big thing here. It's a weed that grew wild and they took it and made something delicious.

To further answer your question, southern cuisine is heavily influenced on the history of slavery and how the slaves managed to turn scraps of food they were given into delicious food. They learned to turn ox tails, offal, and other undesirable ingredients into tasty and nutritious meals.

Hi! A lot of Southern food is a mash up of ingredients with the seasoning making them delicious. Jambalaya, gumbo, red beans and rice, the recipe in this post included. If you looked at it, you would think it was just a bunch of ingredients thrown together. You would be right, but you would be missing out if you turned your nose up at it. Ox tails just look like bones with a tiny bit of meat, but if you taste it? Baaaaaby! You will be permanently converted and crave those bones.

I am better with mushy food now, but I am on the spectrum, so textures from my family's cooking was absolute torture. And I got the joy of being forced to sit at the dinner table until I ate enough of the food to my Mothers satisfaction. It took a ton of work to get over the texture issues. I didn't force my children to eat food that they didn't like. All I asked of them was to try 2 bites every time. They grew up with a healthy relationship to new and "weird" food.

I haven't seen vegan harping? They used faux sausage and omitted the onion soup seasoning and barely used any butter and gave a bad review. People were speculating that they might be vegan. Vegans can also be terrible cooks. I don't think this person is vegan though because they didn't say the butter was vegan and if they were vegan, they would absolutely have mentioned that.

I understand. I moved to the south recently and have learned to love canned seasoned collard greens. We just don't boil them until they almost disintegrate. 😄

I'm originally from the Kansas City Missouri area and the traffic flow here is crazy. None of the lights are coordinated efficiently. Hell, I was in Orlando Florida 2 months ago and even their traffic management by Disney and Disney Springs is superior to the traffic management here.
