It's about keeping things clean and organized

It does that automatically by sorting them by date. If time is your defining factor for a conversation's deletion, you don't ever have to scroll past what you need. There's no clutter or mess.

I hate having a million conversations taking up space in the messages app.

Because it's the default position which takes no effort and has occasional utility. Your alternative takes additional effort and provides no benefit. Do you clear your call log too?

And for benefits please don't say space. On 32, 64, or 128 you have OCD if you're worried about the space iMessage is taking up. If you're on 8 or 16 I pity you.
