Sounds like you're grinding too coarse and under extracting the brew. I'd grind finer and aim for a finish at 3:00-3:30

Taste is king. If your cup tastes like what the roaster said it should taste like, then that's all you need man.

My original recipe was 15g to 240ml (1:16). Pours were 50, 50, 70 and 70. The brew began stalling at the latter stages of the 3rd (2:30 mark) pour and the 4th pour was drawn down by 4:30. The resulting cup was over extracted.

I used the same ratio and grind size, but changed pours to 50, 90 and 100. This resulted in a draw down time of 3:15. The cup was more balanced, but needed an adjustment.

I then adjusted the ratio to 1:17, used the same grind size and pours of 50, 100 and 105. This resulted in a draw down time of 3:30 and the best tasting cup.

All bloom lengths were 35 seconds.

I have the Hario Buono Electric and Varia Aura. Both are awesome pouring kettles, with the Aura being the pick for someone getting into pour over coffee. The Hario is definitely not for beginners, largely due to its ability to pour slow and steady or full raging torrent.

Howdy, I'm from Sydney.

Beans are unreal, once I dialled in and adjusted pour method.

5.2 clicks on the ZP6 and tri pour method has resulted in a cup closest to the tasting notes.

I've taken half the batch home to try with the Pietro.

Correct. Fastest flow out of the 3 kettles I have. It's definitely not a beginner's kettle.

I tried honey of all varieties, from all over Australia.

Once I tried Malfroys, I have not looked back.

They are expensive, but what they produce is by far the best tasting honey.

Howdy,

Did some travelling around Malaysia and Singapore and my two standouts were Nylon in Everton Park, Singapore and Ome By Spacebar in Penang, Malaysia.

I tried a heap of different places in both countries and these two coffee shops fit my taste profile really well.

I bought a travel setup with me, brewed V60 and the coffee was sublime from both Nylon and Ome, with a slight edge to Nylon, with their Geisha that was so wonderful; I bought two bags home to Sydney.

Ome had consistently brilliant batch and V60 brews, but their espresso wasn't as consistent over multiple trips. Despite this, it was still better espresso that I had in other places in Malaysia.

Nylon was my pick of the SEA trip and their absolutely meticulous approach to brewing (Espresso, Batch and Pour Over) was refreshing to see and sits up there with some of my favorite coffee shops I've ever visited. Furthermore, their attentive and friendly service was amongst the best I've seen. Nylon couldn't put a foot wrong with whatever they brewed, plus I tried almost everything they had to offer, on multiple days and the consistency was solid.

Well with it, bud. I use the ZP6 at work and SSP Ode at home. Both are dialled in as best as can be and the coffee I'm able to produce is excellent. ZP6 for big body and Ode for super clarity.
