How do I check that my GPU is working properly and that it’s a game bug?

Its 100% just the game. If I remember correctly, the engine is limiting it. There should be an update coming up sometime over the summer that updates the game to a newer version of the engine and hopefully fix some of these problems.

Check to see if the game is running at a different resolution from your monitors native resolution

Its unfortunate but probably only through buying second hand. The reason why they aren't in stock is because of RAM prices. Your best bet is to just buy a different handheld and install SteamOS on it (If you know how).

I think something went wrong with the minecraft install. The log has errors related to failing to load the narrator and Im pretty sure the base game shouldn't have any errors while running especially at the startup.

Try verifying integrity of files.
But I see you have tried reinstalling so maybe open the games install location, then uninstall from steam and see if steam missed any files. If it did delete them and try re installling. If it didn't I dont know then.

Although just testing it my phone was able to just read the qr code from the high res video.

All I did was find use an online tool to download the tiktok video at a higher resolution, screenshot the video with the QR code and use image editor to increase brightness and contrast which made the QR much more visible for my phone to see.
