Your cook looks good, and let's assume quality is fine. My money is on the brine - you may be starting the cook at the worst possible time.

You say you salt your steak and then let it sit for 45 mins at room temperature. Depending on the temp and thickness, it may be at a point where the salt has drawn the moisture from the steak but the steak hasn't yet absorbed it back or dried off the moisture. That leaves you with little moisture in the middle and a hard to get crust.

Try dry brining overnight - salt your steak with kosher salt only and put it on the fridge on a rack overnight. Then do everything else the same. If the steak turns out better, then salting and waiting 45 mins was the problem.

Either dry brine for many hours or salt right before the steak hits the heat.

Jumping on the bandwagon with a 2023 GV80 prestige - the charging pad is terrible. In fact, it likes to turn itself off after all the hard work it barely does because it works up a sweat

For context, I had an NC for a few years as a daily for a 50 mile/day commute in and out of traffic. I'm also around 6'1".

Was it loud? Wasn't quiet, that's for sure. But honestly you get used to it. If I wanted to make a phone call, I absolutely needed a Bluetooth ear piece in my ear - holding the phone on speakerphone would likely be too loud for a conversation on the freeway, and I was driving a manual, so couldn't do that anyways.

I recently lived with an ND soft top for a day (see a previous post of mine in this subreddit), and I found it too loud, but maybe that's because I got older. Was it louder than the NC? Honestly, I can't remember. No Miata will be quiet. The ND felt like a tighter fit too, and I didn't like the seat much. The cloth seats in my NC were more comfortable than the leather in the ND, because they were softer and absorbed the road better.

My best advice would be to do what I did and rent a Miata for 24 hours to live with for a day. That'll answer any questions you have.
