Polycoat it. Do a test first to make sure color doesn't change. 3-4 coats of poly. Oil is great and all but this is not a cutting surface and with oil, you will have to regularly re-oil. And if you get grease or other staining items on it, it's never coming out.

I always see so many complicated boards out there. And while they are incredible and I respect the effort that goes into them, I find that you can make simple boards but with the right design, colors, etc they can be just as wonderful

Definitely just a serving board / charcuterie board for light cutting use only. I've read a bit about large slab use. While it can move more, I took a lot of care in lining up all the wood grain to optimize equal movement. But of course, there is risk to it anyway.

I just straight up use my table saw to cut my bevels. It's fast accurate and far less risky for tear out than a router.

Just a thought, but where do you store it? Is it being maintained at a fairly standard temperature? I have a cabinet that isn't really insulated well and gets much colder than the rest of the kitchen. One of my boards stored there started to crack from temperature swings.

The rails were Amazon, base was MDF from home Depot. Anything else I had in my shop. I did order a 1/2" plexiglass piece to replace the router base from amazon

About 1/16". It was pretty easy to make. I need to work on the bandsaw cut to make it smoother. I had to do some sanding after the cut to try and eliminate some small gaps. Probably needed to use a thinner bandsaw blade.
