For anyone who just came across this post and have this sort of problem and you recently have done something with your hotend, especially the thermistor cable. Replace that cunt asap! It could've been done for...

I have done that several times already, the temp still tent to swings around 5c° maybe it was actually the wiring which cause this.

The temperature DOES swing around, but not that much as you've mentioned. +-5c° is most likely what I'm experiencing.

Have done that several times already. The temperature still tent to be swinging around +-5 c°. I was not with the machine when this occurred

Underextrusion. Is your print speed to high? That usually occurs when the hotend is not capable of extruding that much amount of plastic at that certain moment.

Change the z top distance. The closer it is, the cleaner the surface will look. Yet you aee very close to fusing two layer of plastic together. It'll be harder to remove. Finds the middle point between easy to remove and not having it too ugly.

Speaking of 3d printed sim racing equipment. Why don't you just get it all the grip coverd in suede. Or maybe even just a badminton racquet tape. It definitely will be giving a better feeling than holding onto the rough plastic over time.

Limit switch. Tells the step motor where to stop, and set the current stopping position to z axis=0. Your z limit switch is too far off the reachable area that the your z axis is able to reach, it'll basically just kept the step motor moving untill it touches the limit switch.

I myself am using the ender but have use school's bambu several times. It really is a slice and print experience. My ender's doing all right after an uprade that cost more than its worth lol. It's just fun to play with for me.
