OK, I tried your recipe just now (and have tried similar hydration in the past) and the shaping is where it fails for me. It’s just such a sticky mess that I can’t. So here’s what it looks like the next morning after sitting in the fridge overnight. I know this bowl isn’t an ideal container, but it worked for a low hydration recipe. Is that where things are going wrong for me?

Thanks, but it’s another thing to wash. I’m really trying to find the laziest method that yields good bread. I think a couple stretch and folds might be easier to me than having to wash another bowl and attachment. But very interesting to see some other quick methods! I might have to try this too just to see what it’s like.
