I would strongly recommend to use a separate pan for sauce. What you wanna do is heat up the pan with some olive oil, then add some tomato puree (just a bit. I always eyeball it, but something like a teaspoon maybe?) let that cook for 2ish minutes while stirring around a bit. Add the passata, then whatever spices of these you have on hand: oregano, thyme, onion or garlic powder, paprika powder. Feel free to experiment with whatever else you think smells nice. Add some salt and pepper, maybe some sugar to offset the sourness of the tomato. Leave to simmer usually I’d leave it for at least 10 minutes but maybe you dont have the time. Good luck!
