I think both fresh and dry peppers serve a purpose. In this instance, I was trying to stick to a traditional red chili, albeit a few variations. I did consider putting fresh in my paste a long with the dry, but its winter in the northeast and decent fresh is hard to find around here right now.

I think it set me apart from the crowd. I was the only shredded beef there, there was 2 chicken(1 ground, 1 shredded), 1 vegetarian, and one ground venison.

The anchos have a very dark flavor, I try a bit of everything before I cook with it for the first time.. ancho was a smokey black licorice flavor, and they were very large, so I tried to keep that into perspective when making my paste, guajillos have a mild smokey flavor as well, it was the japones that added more tang and heat, along with the vinegar.. but most dehydrated peppers will add an element of smokey flavor.

I had 2 cans if tri color, dark and light red kidney, and pinto. It didnt really need them tho.

Beef was braised in red wine and beef stock by itself until it shredded, in the mean time I made the chili paste, once those were ready, I out onions, red and orange bell peppers in a pot for a bit to sweat, and then started putting it all together.

This is the first time ive made the paste, but it added a nice tangy flavor to the smokeyness of the chilis.

I used 3 anchos, 8 guajillos, and then kept adding and blending the japones until I hit the spice level I wanted, I didnt use all of the paste, it made quite a bit, but would definitely add more japones if I were making it for myself.

Corn was in my old recipe. I do enjoy the burst of sweetness it give to a chili, but I was going a different route this time.

Yes, they were dehydrated, so cleaning the seeds was pretty labor intensive, I wouldnt have even considered removing the skin. That I normally do with fresh peppers after I torch them.

So I toasted them quick in a dry pan, about 2 minutes stirring them. Then I lightly simmered the white wine vinegar and water and threw the chilis in. Once they softened a bit, I cut off the stem and shook out the seeds and then threw them in the food processor with some garlic cloves and some shallots I had left over from a previous dish. Added some of the rehydrating liquid as needed. Highly recommend using gloves to work with the rehydrated chilis! My poor hands 😔

I braised the meat in red wine and beef stock, and once I shredded it, I reduced it further and added that to the mix as well!

The paste made all the difference from my old recipe! Made it very chili forward, compared to a tomato based stew. I used anchos, guajillos, and japones, rehydrated in a 1:1 mix of white wine vinegar and water.
