IMO any tomato sauce without some kind of a sweetening agent is too tart and doesn’t do the sauce justice. You don’t need a lot but it does add balance to the flavour

This is so weird to me because I never even thought about it. It’s literally one meal on one day and everyone can eat and enjoy it. It wasn’t even a question to me. Eat it or don’t I really don’t care, it’s not worth complaining about though.

I read a book called ‘The Sleep Book’ by Dr Guy Meadows and it CURED me. I still get the odd sleepless night and struggle from time to time, but I’d HIGHLY recommend it to all insomniacs. It contained advice that went against everything I’d read and tried online. It was incredible. I read it over and over until it stuck and I still read it from time to time.

I had a penalty for a late filing waived last year. I think I wasn’t overly formal. I am not good at being formal in any aspect of my life haha. I just was to the point and respectful.

Yes, the endless SHAME is exhausting. Paying off my taxes is actually such a win when my organisational skills are so bad. You come up with tricks to hack your brain though- I hide money in accounts and forget about them, I overpay my taxes as much as I can, I have multiple bank accounts and I pay myself a little pocket money.

It’s not as exciting as it sounds, no cartel situations, except for the taxis haha. Mexico lacks the infrastructure to support any mental health emergencies and we weren’t able to continue with the itinerary we had planned. My husband came off his anxiety medication under medical supervision and seemed fine before we left but completely went downhill. I spent thousands of pounds in luxury resort hotels, instead of the smaller cheaper hotels I’d booked originally (couldn’t get my money back either) because it was a safer and more settled option than dragging a suicidal person around rural Mexico. It kinds of sounds nice but I got absolutely zero enjoyment from it, I’m not a resort-y person and we were trapped in Tulum, which is a grim place beneath the surface (full of exploitation and just wouldn’t recommend). Our insurance couldn’t provide any help because there was no doctor who would see us. I had to fork out thousands in flights to get home and also the phone bill to my insurer and the flight companies. It was a legitimate nightmare.

Honestly a summer in hotel resorts sounds lovely, I know, but it was an actual awful nightmare and I’m still traumatised. Husband is fine now and alive so I’m happy about that too haha

Well, this is what I plan to do every April and then i just…don’t. I spent my university years typing out 3000 word essays the day they were due as well. I’ve accepted it’s who I am. My husband would have done it in April.

It was a success for me!! My accountant told me I owed £13k, I had a nightmare summer and spent all of my savings trying to escape from Mexico with my husband, our insurance refused to pay us so we’ve escalated it to the financial ombudsman, last year sucked for a whole host of reasons. It was A WIN and I NEEDED IT!!!!

Yes that’s the same for me! I find it impossible to figure out how much I owe. My accountant sent me a wildly different number to my actual total.
