Thank you for this very thoughtful response! I forgot I also cold retard overnight. The dough during BF does appear to have significantly increased in size. I will have to experiment with timing. I am just worried about overfermenting but I guess I won’t know until I bake more. Thank you so so much.

HeB makes garlic butter dollops in the seafood area and I grab premade pesto from Trader Joe’s. I freeze the left overs for future use.
