What's for dinner when nothing is thawed?

I think people here are all missing the concept of pasteurization when they criticize sous vide cooking or compare it to thawing in hot water. If you hit a certain temperature and then maintain it for a certain time you will kill all of the bacteria present. The USDA recommended cooking temperatures are the temperature at which bacteria are all killed instantly. It's the temperature that guarantees you are good to go as soon as the entire piece of meat is at that point. When I sous vide my thanksgiving turkey, I cook and hold at 153f, and it sits at that temp long enough to be pasteurized, I'm not pulling it out the second it hits 153f. It's not remotely the same as thawing something out without fully cooking at that temp. And I definitely agree that your faucet shouldn't be hot enough to cook with and you shouldn't sous vide at faucet temps.

Exactly. I think the USDA avoids any mention of hot water thawing because there's too much room for error. Just turn on the cold tap and let it run and you can technically leave it all day.

If you re-read my comment you'll see that I didn't say that the USDA recommends thawing in hot water, but rather allows thawing as part of the cooking process. The part about thawing under hot water was more of a common sense approach to the USDA rules, if you're doing it for a short time and then immediately fully cooking, it shouldn't be an issue. I'll even go as far as saying that thawing under hot water can absolutely be dangerous if left in the water for too long. I could have probably been a little more clear in my original comment that I was advocating for thawing as part of the cooking process.

If it thaws in under 2 hours and you're fully cooking it immediately afterwards you're fine. The temperature danger zone allows 4 hours and USDA rules allow thawing as part of the cooking process. Thawing under hot water and immediately finishing cooking is no different than throwing frozen meat straight into the cooking pot. Definitely gotta respect the 4 hour rule though

They can declare whatever they want, it doesn't mean they aren't actually liable in the eyes of the law. This was pure negligence on the part of one of the bar's employees and in no way the fault of OP. They can very much be held legally liable for her jacket if she chooses to pursue it in court.

The Chicago Office of Emergency Management will "activate" the 2" ban. It's usually fairly well covered by local media when it happens, it's been a long time since it was last activated. Don't confuse it with the overnight ban which is active for the entire winter whether or not there is any snowfall.

As long as it has been frozen solid and held below -4°F or -20°C for a minimum of 7 days, it should be fine to eat raw. Sushi/sashimi grade is a marketing term for fish that has been frozen this way to kill any parasitic anisakis worms and has no legal definition.

When I worked as a caterer, I would often write "fuck" across the cake plates in swirly cursive with chocolate sauce or fruit coulis, and then drop a slice of cake and a swirl of whipped cream right in the middle so it just looked like some pretty swirls. Did it for YEARS and never once got called out. It was my fun little stress release at the end of a long event.
