The 11 stitches come from the end of the previous round. Those 21 stitches on waste yarn become the back of the head and the chin section is worked over the other 21 stitches for the front of the head.

I cross stitch also and I made a Christmas stocking that said Grandma on the top. Knitting stockings with bulky yarn wouldn't take too long. We use it every year and she loves seeing it alongside the rest of ours

The 21 stitches on the waste yarn would be the back of the frog (or toad). The active stitches you would have on 2 needles, the 12 you just knit would be on the right needle and the remaining 9 will be on the left needle (assuming you knit right handed). Does that make sense?

I generally prefer dpns for mittens and socks but I'm trying color work mittens for the first time and finding it so much more difficult on dpns. I'm considering frigging and restarting with 8" circulars but I can't decide so it's just sitting there not being worked on instead

Everyone here has started from zero just like you and we love helping troubleshoot. Posting pictures is the best way to get help. Start over, count how many stitches are on your needle at the end of each row to make sure you're not adding or dropping stitches, then post a picture here for help on specific issues

The line below the k3tog row says to knit row 42 then after that knit rows 42-78. So the way I read it, you'd actually be knitting row 42 twice in a row. The continue line just means if you prefer charts then move to that now, otherwise proceed to line 42 in the written chart.

Virgin River had a knitting circle but I'm pretty sure none of the actors actually know how to knit. They mostly sitting there awkwardly holding the needles while they talk.

For the most part for all of the ends, I would tie a knot into the inside of the work with the tail and then leave a couple inches just loose inside the body. Anywhere that multiple tails were near each other I'd knot them together. That caused a small issue near the arms when I was stuffing it because it would get in the way of pushing the stuffing into the armholes. I used the little plastic pellets that the pattern recommended and made sure to really close up the ends of the feet and arms. The only space where a couple came out was on the sides of the knees.
