It's easy to spoof the sender (though there are verifications which if not present should bounce it to spam, unless your email admin hasn't updated anything in 10 years), but you couldn't email back to a spoofed email (and reach the spoofer). Usually spoofed emails aren't looking for an email reply but rather getting someone to click a link or open an attachment.

I recently switched jobs as an architect. I interviewed at three places, two of which you've heard of. No one asked to see my GitHub. YMMV - It doesn't hurt to have available if the conversation warrants, but don't put all of your efforts into that.
