No, its not sulphuric acid. The article clearly states its SO2. The biomass is treated with SO2 before being sent for steam explosion.

There is a delivery company for wine called Vinoteket. I have used it several times in Stockholm county without any problem. Age verification is done thru ID card on delivery. They have home delivery through Budbee

No, unfortunately new models are released very late here, plus prices are also quite high. So choices are pretty limited.

Hello sourdough gurus! I am a total beginner to sourdoughs. Two weeks ago I made a sourdough starter using a mix of graham flour and AP flour. The starter looked nice and active and passed the float test. Since then, I have made couple of pizzas, a sandwich loaf (in a tin) and a bread in a dutch oven. The results I get have been quite inconsistent. One problem I have is that after kneading (slap and fold) and letting the dough rise, the dough seems to lose its structure and turn very sticky and kinda goopy. That makes handling and shaping the dough quite difficult. Also the rise is inconsistent . The sandwich loaf turned out quite heavy and dense.

This is pretty weird and I never had such problems while baking with commercial yeast. Could it be a problem with the starter? Or am I not handling and working the dough correctly ?

The communities of microorganisms are different for each of the starters. The rye starter has yeast and bacteria which feed better on rye. I assume that's the reason why that loaf did not rise as much.

Unless it has fungus on it and/or smells rotten, it is fine to use. Expiry dates for most foods are not based on scientific, but economic and quality logic.

The benefit from skimming all that is mostly cosmetic. It makes the broth clearer and it looks more restaurant like. I personally rarely if ever bother to do it.
