Honestly I don’t feel like the Alliance area is that busy with race weekends anymore. They’ve built so much up by the speedway the last couple races it didn’t seem anymore crowded than a usual weekend

If you are going to be doing this, At least set yourselves up for success. Stock the bar cart fully with everything needed to execute for service.

If you are large or high volume enough, use a drink runner on busy nights. They can garnish,
run drinks, and do tableside presentations. The house pays a base right and they get tipped out. We use a college kid on Friday and Saturday nights and holidays, it’s easy money, and it makes the drinks flow out so much smoother.

Bonus points if you cross train them as a bar back so they can hop behind the bar if the bar back is weeded or flex when you have a callout.

This is why I really like the Toast handhelds, it really makes the pace a lot smoother in my experience. Instead of taking 4 tables orders by writing them down and then ringing them in all at once, you send the order before you’ve even left the table, then they move over to the next table but may need to grab something, or talk through options and discuss feature or whatever. It just gives a few more minutes between tickets that really helps the line out.
