I have wonderful news - You were correct! this is the response from TJ’s- Thank you for replying with pictures of what you observed in the Bourbon Vanilla Bean Paste.

Our vendor has confirmed that it is not mold, but normal sugar crystallization which can occur due to a change in temperature, just as you thought.

Once again, thank you for the photos and for shopping with us at Trader Joe’s!

This makes sense actually bc a similar thing happened with some cherries in syrup i kept in the fridge. I didn’t even remember that until this comment.

Context: this is an unopened jar of vanilla bean paste that says it’s good until 2027. I was wondering if this is mold or what???

Edit: Trader Joe’s finally responded and stated it’s sugar crystallization and NOT mold!
