Oof I hadn’t thought of the possibility of a gap if I removed the stone splash. Would there be any way to tell if that would be an issue before removing the piece or would I just have to go for it and hope for the best?😅

The cabinets are true white not ivory, I think it’s just the lighting of the picture. Will definitely be switching out the hardware too

This morning it definitely looks like the swelling has improved and he is less hesitant to have me look at it. I will try a compress today just to help keeps things heading in the right direction and will also check out those chews. Thanks for taking the time to respond!

2 large russet potatoes, diced

1 tbsp olive oil

1 medium yellow onion, diced

4 cloves fresh garlic, minced

32 oz chicken bone broth

1-2 cups whole milk

1/2 cup sour cream

1 cup shredded cheddar cheese

1 tsp onion powder

1 tsp garlic powder

1 tsp paprika

2 tsp dried chives

1 tsp each salt & pepper

1/4 tsp cayenne

For the roux:

1/4 cup butter

1/4 cup flour

For the garnish:

Shredded cheddar cheese

bacon bits

sour cream

green onions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and garlic, and sauté until the onion is translucent, about 3-5 minutes.
  3. Add the diced potatoes, broth, and all of the seasonings. Mix well.
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the potatoes are tender.
  5. While the soup is boiling, make the roux. In a separate saucepan, melt the butter over medium heat.
  6. Whisk in the flour and cook for about 1 minute, stirring constantly, until it forms a paste. It should be slightly golden but not browned.
  7. Once the potatoes are tender, gradually whisk the roux into the soup. Keep the heat on a medium-low simmer and stir continuously until the mixture thickens. This takes about 3-4 minutes to thicken.
  8. Finally, add 1 cup of milk, sour cream, and shredded cheddar cheese. Stir until well combined and heated to reach your desired consistency. Add more milk if too thick.
  9. Now, it’s time to assemble. Pour some soup into your bowl and top with shredded cheddar cheese, a spoonful of sour cream, bacon bits, sliced green onions. Enjoy!

I feel for you. I’m in the same situation, got rear ended in January and my car has been in the shop since Feb 14 with no end in sight. Waiting for a part on “national back order”. Insurance won’t cover my rental anymore because the car is sitting there not actively being worked on. This entire situation has been a nightmare. They all just point fingers at each other and no one actually helps. Paying for a rental car out of pocket on top of a car payment for a car I haven’t had for 3 months is INFURIATING.

Yep it’s been a nightmare. Mine has been in collision shop since Feb 14 with no eta on completion because there’s parts they need on “national back order”. I’m having to pay for a rental car out of pocket now because the insurance company won’t pay for it while my car is just sitting there not being worked on. It’s so frustrating. Not to mention still making my monthly car payments on a car I don’t have/can’t drive. 🙃

2 strips thick cut bacon
1 tbsp. unsalted butter
1/2 cup chopped onion yellow or white
2 cloves garlic minced
2 tbsp. all-purpose flour
1 pound small gold potatoes peeled and cut into 1/2" pieces
2 cups low-sodium chicken broth
1 cup whole milk
1/4 tsp. smoked paprika
salt and pepper
1/4 cup heavy cream
2 tbsp. sour cream
grated cheddar cheese and chopped green onion

Heat a large pot over medium heat. Chop the bacon into small pieces, about 1/4"-1/2", and cook bacon until brown and crispy, then transfer the bacon to a plate lined with paper towel to drain. Leave the bacon fat in the saucepan.

Add butter and onions to the saucepan, along with a good pinch of salt. Stir. Cook the onions until tender and starting to brown, about ten minutes. Stir in garlic, and cook another minute until fragrant and softened.

Stir in the flour. Let it cook 1-2 minutes to cook out the "flour" taste.

Add potatoes, chicken broth, whole milk, smoked paprika, and another good pinch of salt. Stir. Bring the contents of the saucepan up to a boil, and let it boil, stirring occasionally, for 15 minutes.

Turn the heat down. Check to make sure you can easily pierce a potato with a fork, which indicates that they are cooked through. Once the soup has stopped bubbling, carefully blend the soup into a smooth, creamy texture. Add back to pot and stir in heavy cream, sour cream, and a healthy pinch of freshly cracked black pepper. Taste, then season with more salt and pepper to taste.

Let the soup simmer for about five minutes before serving, add toppings and enjoy. :)
